ABOUT LAKE ELMO RANCH

Lake Elmo Ranch is a 20 acre property with existing farm buildings in Lake Elmo, Minnesota. As a nod to the history of the farm/ranch, we've chosen the name Lake Elmo Ranch and will base certain elements of the future buildings and design off of the ranch style as well.

We've broken the build into four phases with the hopes of getting things started sooner rather than later. ​

Phase One: Food Hall, Pickleball Courts (indoor & outdoor), Outdoor game area, Karaoke room, Golf Simulator, Large Storage, Bathrooms, & Parking

Phase Two: IVY Venue, a modern barn style venue featuring a silo, windmill & more. Spanning 12,000 sq. ft. of venue, 3,000 sq. ft. of cocktail space, and outdoor ceremony space. We plan for increased sustainability here including rain collection , hobby farm, garden and the introduction of solar power. 

Phase Three:
Two Lodges that sleep 20.

Phase Four: Swimming Pool, Locker Rooms, Solar Farm, Rental Farms or Baseball Field

GETTING STARTED

Getting Started with Phase One: Food Hall 

-10000 sq ft food hall - barn style (cupola), seating for 400 with 5 food kiosks 

- 1 story - multiple levels and music stage built in 
-4000 sq ft kitchen shared by 5 food vendors 
-2000 sq ft pizza kitchen and take out drive through 
-8 covered pickle ball courts with sitting areas top golf style towards the road for noise - farmers market style or A frame roof that could be heated
-8 outdoor pickleball courts with expansion possible to 8 more courts
-Outdoor game area bags, bocce, swings, grass area, picnic tables, fire pits 
-Karaoke room seats 40 and soundproof 
-Golf simulator room (2) sound proof with lounge furniture 
-office for 3 people 
-large storage separated for different businesses
-bathrooms  
-area for parking for 200-400 cars, grass for overflow

NEXT STEPS

We are working with Blue Pencil Collective to design a site plan and are also working with the city to change the use of the property from residential to commercial.

Phase Two: IVY Venue Details
-12,000 sq ft venue similar to JX matching style, one story, offices, maintenance / storage, seating for 500
- 3000 sq space for cocktail hour / room flips, lots of windows to outdoor space
- outdoor ceremony space, seating for 250
Sustainability:
Rain collection
Hobby farm: pigs for composting, sheep / goats for cutting grass, rain collection, wind, solar, grow spice

SUSTAINABILITY GOALS

​We plan on becoming "Green Business Member" Certified by focusing our efforts on the following: 
  • Use environmentally friendly (reusable, compostable, recyclable)products in at least two of these categories: Paper, including napkins; Cleaning products; Linens, service ware (e.g., cups, plates, containers, cutlery, napkins, straws, condiments).
  • Encourage clients to co-locate events with public transportation.
  • Use of a green office or facility, including resource reuse and maximum use of post-consumer recycled resources as well as maximum water and energy efficiency. This includes stormwater management if companies have access to the exterior of their buildings or property.
  • Provide reusable hot beverage cups and do not serve water in single-use plastic bottles.
  • Sort recycling into more than paper and then metal/glass/plastic.
  • Use of linens where paper products are typical.
  • Only serve certified Fair Trade (preferred) or USDA certified organic coffee, tea, and sugar.
  • Signage/ education explaining green efforts.
  • Donations of leftover food to food banks or hospitals for flowers.
  • Snack service focused on locally available, healthy, minimally processed foods.
  • Select food vendors that are local or committed to sustainability.
  • Vendor giveaways are sustainable.
  • Focus on vegetarian food with limited meat options; meat is sustainably sourced; provide food options for dietary restrictions.
